Peanut-Butter Dream Bar

This raw deliciousness is so creamy...so tasty...so chocolaty...you wouldn't even think it was healthy for you!



But it IS!! 

With no refined sugar, and full of nuts, seeds, cacao and grains-this bar is a hit for everyone! My kids even love it!!

This bar would make a great pie, school snack, after workout snack etc. I have had a few requests for the recipe-so here it is... 
(this will be in my cookbook also) Enjoy!!

Ingredients:

1st Layer-
1 cup raw cashews
1 cup regular rolled oats
1 Tb chia seeds
1 Tb hemp seeds
1/2 cup raw pecans
2 Tb cacao powder
2 heaping Tb fresh peanut butter
1 Tb 100% pure maple syrup
dash Real salt
1/4 tsp pure vanilla
1 cup medjool dates, pits and stems removed

2nd layer-
1 cup medjool dates, pits and stems removed
1/2 cup soaked cashews (pre soak in purified water for up to 2+ hours)
2/3 cup cacao powder
1/3 cup coconut oil
1/3 cup coconut butter or manna
1/3 cup almond milk
1/3 cup 100% pure maple syrup
2 Tb water
2 Tb fresh peanut butter
Chopped peanuts to top

Set aside 9x9 inch glass pan. It does not need to be greased or prepared. 

To make the 1st layer: In food processor, combine cashews and oats and pulse until flour forms. There might be a few slight chunks. Add chia seeds, hemp seeds, pecans and cacao and continue to pulse until pecans are chopped into small pieces. Add the remaining ingredients and pulse until all combined or until mixture stops moving and sticks together. At this point, remove from food processor and press in pan and continue to mix and press with hands if the food processor did not fully incorporate mixture. 

To make 2nd layer: In food processor, combine all ingredients until smooth. It should be like a thick frosting consistency. If more liquid is needed, slowly add a little water at a time until desired results. It should be thick, yet smooth and not clumpy. When fully mixed, smooth on top of 1st layer in pan. 

Top with chopped peanuts and refrigerate at least 4 hours before serving. Keep refrigerated. It should last to up to a week, if you don't eat it all before then :) Enjoy!!

  1. This looks so delicious! I noticed it called for coconut butter (manna) and I wondered if you have a food processor that you could recommend in order to make said manna?
